    In 1776, only East Tennessee was settled, but it has been known as the Volunteer State since the 1780 Battle of King's Mountain when hundreds of Tennessee militiamen turned the tide of Revolution in the South. Two years later, many claim that the "last battle of the American Revolution" took place on the slopes of Lookout Mountain outside Chattanooga.

    On July 4th, 1776, our Founding Fathers toasted the Declaration of Independence with Madeira, a fortified Portuguese wine. While colonials consumed, on average, 34 gallons of cider & beer per year, Madeira was their preference in wine. Perfectly made for transatlantic trips, the galleon's rolling and pitching actually improved the Madeira's quality.

  • Patriots' Story
    Upon learning of the Battles of Lexington and Concord in early 1775, at 14 yrs. old, 4th great-grandfather, Abraham Harrington joined the Continental Army and fought at the Siege of Boston. Years later (1778), in the Battle of Newport, at 17 yrs. old, a fellow Bluecoat's bayonet accidentally pierced his right eye causing its permanent loss.

    At the start of the American Revolution, goods from Great Britain and France became scarce, so colonials turned to Portugal for their wine (Port & Madeira). After American independence was won, the Portuguese Navy provided protection from Barbary Pirates, and, in May 1791, Portugal became the first country to officially recognize the new nation state.

    Late in the American Revolutionary War, the Continental Congress could not provide usable hard currency to pay Washington's field soldiers and French sailors because its paper continentals were worthless. To the rescue came our Spanish friends to the South with Mexican gold (ORO). These funds were used to invest in an American victory and keep soldiers on the front lines.

    Smoky Dody is a still dry cider with a smoky scotch flavor. Apple flavor is very subtle with undertones of oak and maple breaking through the smoke.
  • Patriots' Story
    Leading up to the Revolutionary War, Joseph Doty was a prominent blacksmith and barrel cooper in Rensselaer County, NY. During this time period, clothes, houses and streets all carried the scent of smoke, especially for a blacksmith. Smoky Dody hints of enjoying a mug of hard cider in front of a traditional hearth.

    Coureur de Bois (pronounced: koo-ree-er duh bwah) is the Eighth Reserve Batch in our OAK SPIRITS COLLECTION. This cider/wine has been aged for over a year, and placed in an imported 500 Liter Puncheon that previously held premier French Cognac. The flavor of the Cognac overtones fully engulf the apples and maple syrup with complimentary blending. A must try - this is one of our best to date.

  • Patriots' Story
    Coureurs des bois were unlicensed, roving fur traders from New France that were considered outlaws by the English and Dutch settlers along the Hudson River. Their currency was French brandy. They played a vital role in establishing trade routes and exploring the wilderness that became New York and New England.

    St. Paddy's Delay has a very complex flavor on the palette. The aroma presents caramel and light spice.     St. Patrick's Day 1757, Fort William Henry was manned by Irishmen. Most soldiers at the Fort were allowed to imbibe on this holiday. Captain John Stark, fearful of a French attack, delayed the celebration for his Rogers' Rangers. That night, as the only sober soldiers, Captain Stark and his men, successfully defended the Fort.

    An Doras (pronounced: on door-us) is the Sixth Reserve Batch in the Oak Spirits Collection. "An Doras" is Scots Gaelic for the Founder's name: LaPorte (meaning "The Door"). After Primary Fermentation, the cider is racked into freshly dumped Speyside Single Malt barrels from Scotland. This cider has the strongest overtones of Scotch Whiskey in the Oak Spirits Collection. This cider begs the drinker to enjoy a fine cigar alongside the ice cold mug of refreshment.

    After the Revolutionary War, Whiskey overtook Rum as the drink of choice. Because of British embargos, molasses was a rare comodity. Colonist turned to Whiskey as they sought a drink free from English connections. These new whiskey makers were the Scottish Patriots that had adopted a new American identity.

    Patriots' Cider® is the Fifth Reserve Batch in the Oak Spirits Collection. This is a truly Colonial cider made from fresh apples and maple syrup and aged in freshly dumped Caribbean Rum Barrels. The Rum flavor is more subtle than the other varieties of bourbon and scotch barrels, but blends well with apple flavor of the base cider. This cider has a slightly higher acid content and a more full flavor from the tannin in the Harry Masters Jersey apples.

    Prior to the Revolutionary War, Cider and Rum were the most common colonial beverages. Caribbean Rum was preferred but with over 140 domestic Rum distilleries, American Rum was cheap. It was common for early Patriots to ferment juice in used Rum casks to enhance the taste of their most favorite drink - CIDER!

    This is the Third Reserve Batch of Oaky Dody. After primary fermentation, the cider is racked into freshly dumped Kentucky Bourbon Barrels where the unique flavor of the Bourbon is added to the cider. Prior to bottling, the cider is aged for a number of months to allow the higher alcohol content to mellow.

    "This is such a unique drink that is more akin to a spirit than a cider. Having been aged in Buffalo Trace barrels, it has the buttery smoothness and oaky undertones of a bourbon without the 45% ABV. It also has the added touch of a subtle apple flavor, which nicely complements the oak and bourbon flavors and delivers a well-balanced flavor profile. Since it clocks in at 12% and is quite smooth, you have to be careful to not overdo it. Fans of cider and bourbon alike will enjoy Oaky Dody."

In 1769, as a private in the NYC Militia, Joseph relocated from Oyster Bay to Rensselaer County, looking for land and opportunity. Here, he rose to prominence as a local blacksmith and barrel cooper.

  • Description
    The Disturbance is a combination of a 20% wild ferment and an 80% inoculated ferment. The result is a natural cider with a seriously sour presentation not unlike a tart lemonade. The majority of the cider was inoculated with Monastery Ale yeast and blended with a wild fermented Golden Russet/Ashmead Kernel blend. The resulting cider is in the Spanish style that is smooth, yet tart in mouthfeel.

  • Patriots' Story
    In 1684, eighth Great-Grandfather, Lieut. Philip Smith, was “murdered with an hideous witchcraft” in Hadley, MA. Mary Webster was wrongly accused to be the witch, hung by the town and buried in the snow. Mary survived, lived a long life and was known as HALF-HANGED MARY. Rev. Cotton Mather recorded the event and called the matter “the disturbance.”

    Northern Gold is an Extra Dry Hard Cider made with 82% Heritage Apples. Northern Gold is 8.1% Alc/Vol and fermented from freshly picked New York State Apples with no added preservatives, additives or flavorings. The name derives from the apples used: Golden Varieties combined with Northern Spy Apples. This cider is amazingly refreshing on a hot summer day — my go to during a day of hard work in the cidery and orchard!

    Northern Gold is an extra dry cider that is refreshing and clean. The aroma of the Golden apples is preserved with a pleasant apple flavor on the tongue. Served best very cold. Goes well on a hot summer day.
  • Patriots' Story
    Actual gold and silver coins were hard to come by in Northern Colonial America, but hard cider was in great abundance. As a result, cider became a key component of the colonial economy. Barrels of cider were often negotiated as part of barter agreements or in payment of rent. On the earliest roads of New England, some construction workers were paid in hard cider and applejack.

    So, it can be said that NORTHERN GOLD in colonial America took the form of HARD CIDER!

    Cidre de la Porte pays tribute to our French and Canadian Ancestry that emigrated to the US from New France under the name Sorel-dit-LaPorte. After Primary Fermentation, the cider is racked into freshly dumped Portuguese Ruby Port Barrels for over one year. The final cider picks up the wine flavor of the Ruby Port while remaining in the dry category. At 10% Alcohol by Volume, this cider is very smooth and has slightly less alcohol content than the Oak Spirits Collection.

    Our Sorel-dit-LaPorte lineage arrived in New France in the late 1600’s and emmigrated over the generations along the Montreal to Albany corridor to our current Cidery location shown as Schaticook in the southeast corner of this Louis Brion de la Tour map of 1777. We honor our French and Canadian ancestry with our Cidre de la Porte.

    In August 1776, news of the Declaration of Independence reached Russia. In London, the Russian Ambassador praised the leadership and courage of the Founding Fathers, but, the text of the Declaration was outlawed in Russia until the middle of the 19th Century because of the "self-evident" listing of the "unalienable Rights" of all men, "endowed by their Creator."

    Apelchemy is the Sixteenth Reserve Batch in our OAK SPIRITS COLLECTION. This cider/wine has been aged in Chartreuse Barrels imported from France.
  • Patriots' Story
    Alchemy was the art of transforming or combining elements into something new. In 1605, a French Marshall found an alchemical manuscript with the recipe for an herbal concoction. By 1764, the recipe became known as Grande Chartreuse. In this tradition, Patriots' Heritage has created something new, aging apples & maple in Chartreuse barrels - Apelchemy.
